En Costa Rica, donde vive desde el a\u00f1o 1982, ella sigue con las tradiciones culinarias salvadore\u00f1as, como las pupusas, com\u00fanmente preparadas en familia o para eventos comunitarios y fiestas populares.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-weight: 400;\">El ingrediente principal de la pupusa es el ma\u00edz criollo, utilizado para preparar la masa. \u201cEl ma\u00edz es parte de nuestra identidad cultural mesoamericana en cada una de sus expresiones (pupusas, tortillas, chicha, atoles, etc)\u201d, destaca Sulma, que desde muy peque\u00f1a ya mol\u00eda el ma\u00edz en piedra en El Salvador. La receta fue una ense\u00f1anza de familia, a su abuela le ense\u00f1\u00f3 la suya, y ella le ense\u00f1a a sus hijos y nietos.\u00a0<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-weight: 400;\">La receta de las pupusas fue una de las 10 seleccionadas en el concurso \u201cSabor a Iberoam\u00e9rica\u201d,<\/span><span style=\"font-weight: 400;\"> que <\/span><span style=\"font-weight: 400;\">premia historias de recetas culinarias tradicionales de las comunidades migrantes de la regi\u00f3n. R<\/span><span style=\"font-weight: 400;\">esultado de una sinergia de los programas de cooperaci\u00f3n iberoamericana en las \u00e1reas de cultura, cocina y migraci\u00f3n, el concurso fue presentado en abril de este a\u00f1o por<\/span><span style=\"font-weight: 400;\"> la <\/span><a href=\"https:\/\/www.segib.org\/\"><span style=\"font-weight: 400;\">Secretar\u00eda General Iberoamericana (SEGIB)<\/span><\/a><span style=\"font-weight: 400;\">, los programas IberCultura Viva e <\/span><a href=\"https:\/\/iber-rutas.org\/\"><span style=\"font-weight: 400;\">Iber-Rutas<\/span><\/a><span style=\"font-weight: 400;\"> y la iniciativa <\/span><a href=\"https:\/\/ibercocinas.org\/\"><span style=\"font-weight: 400;\">IberCocinas<\/span><\/a><span style=\"font-weight: 400;\">. El <\/span><a href=\"https:\/\/iberculturaviva.org\/es\/sabor-a-iberoamerica-conoce-las-historias-de-recetas-seleccionadas-en-el-concurso\/\"><span style=\"font-weight: 400;\">resultado<\/span><\/a><span style=\"font-weight: 400;\"> fue anunciado el martes 3 de septiembre.\u00a0<\/span><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<h4><b>Nombre de la receta: Pupusas salvadore\u00f1as a la le\u00f1a<\/b><\/h4>\n<p>&nbsp;<\/p>\n<p style=\"text-align: justify;\"><b> <a href=\"https:\/\/iberculturaviva.org\/wp-content\/uploads\/2019\/09\/Pupusas_foto_ricardo_araya.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-12897 alignright\" src=\"https:\/\/iberculturaviva.org\/wp-content\/uploads\/2019\/09\/Pupusas_foto_ricardo_araya-960x720.jpg\" alt=\"\" width=\"351\" height=\"263\" \/><\/a>* <\/b><strong>Ingredientes | Cantidades<\/strong><span style=\"font-weight: 400;\">: Ma\u00edz criollo, ayote, queso, loroco, frijoles, aceite, espinacas, tomate, repollo, chile picante, or\u00e9gano, vinagre y sal.<\/span><\/p>\n<p style=\"text-align: justify;\"><b>* <\/b><strong>Modo de preparaci\u00f3n<\/strong><span style=\"font-weight: 400;\">:\u00a0<\/span><span style=\"font-weight: 400;\">1) Se muele el ma\u00edz tierno para preparar la masa. 2) Se preparan diferentes rellenos: frijoles molidos con queso, ayote rayado con queso, espinacas con tomate. 3) Se prepara el encurtido con repollo rallado, or\u00e9gano, vinagre y chile picante. 4) Se coloca una bolita de masa en la mano, se rellena con cualquier relleno preparado y se pone al comal (<\/span><em><span style=\"font-weight: 400;\">disco de barro o de metal que se utiliza para cocer tortillas de ma\u00edz<\/span><\/em><span style=\"font-weight: 400;\">) con aceite, que est\u00e1 caliente del fuego de le\u00f1a; se deja por unos minutos hasta ver que este cocinado cada extremo. 5) Se sirve de dos en dos con encurtido encima.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<h4><strong>La historia de la receta, por Sulma P\u00e9rez<\/strong><\/h4>\n<p>&nbsp;<\/p>\n<p style=\"text-align: justify;\"><span style=\"font-weight: 400;\">Las pupusas salvadore\u00f1as son la comida t\u00edpica del El Salvador,\u200b probablemente por la tradici\u00f3n instituida de generaci\u00f3n en generaci\u00f3n. En el caso de esta receta fue una ense\u00f1anza de mi familia, a mi abuela le ense\u00f1\u00f3 la suya, yo le ense\u00f1o a mis <\/span><em><span style=\"font-weight: 400;\">hijxs<\/span><span style=\"font-weight: 400;\"> y <\/span><span style=\"font-weight: 400;\">nietxs<\/span><\/em><span style=\"font-weight: 400;\">. Com\u00fanmente se prepara en familia o para eventos comunitarios y fiestas populares. Nos reunimos en grupos de mujeres a preparar pupusas, siendo esto un espacio de intercambio y trabajo colectivo. Los ingredientes en su mayor\u00eda son frescos del mercado o sacados de la huerta.<\/span><\/p>\n<div id=\"attachment_12896\" style=\"width: 361px\" class=\"wp-caption alignright\"><a href=\"https:\/\/iberculturaviva.org\/wp-content\/uploads\/2019\/09\/Pupusa_credito_ricardo_araya.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-12896\" class=\"wp-image-12896\" src=\"https:\/\/iberculturaviva.org\/wp-content\/uploads\/2019\/09\/Pupusa_credito_ricardo_araya-960x640.jpg\" alt=\"\" width=\"351\" height=\"234\" \/><\/a><p id=\"caption-attachment-12896\" class=\"wp-caption-text\">(Fotos: Ricardo Araya Rojas)<\/p><\/div>\n<p style=\"text-align: justify;\"><span style=\"font-weight: 400;\">Esta receta se sigue conservando de generaci\u00f3n en generaci\u00f3n, ya que es una comida cotidiana, en la comunidad migrante salvadore\u00f1a y es com\u00fan su preparaci\u00f3n en casa de familias. La receta ha tenido que ser modificada ya que se ha tenido dificultad con conseguir ingredientes tradicionales como el loroco; y por motivos econ\u00f3micos y de salud se ha evitado hacerlas con carne, como se hace en la actualidad. Algunos ingredientes por lo que se reemplazan son el ayote rayado, los frijoles molidos, las espinacas y el tomate a cambio de la carne. En nuestro caso, la mayor\u00eda cosechados de la huerta en casa, o comprados\/intercambiados a vecinos de la comunidad. La receta vegetariana ha despertado inter\u00e9s de personas vegetarianas o que prefieren alimentos sanos sin carne, por lo que se ha vuelto com\u00fan en los \u00faltimos a\u00f1os.\u00a0<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-weight: 400;\">En nuestra comunidad de Longo Ma\u00ef, aqu\u00ed en Costa Rica, es el plato m\u00e1s aclamado por el turismo y voluntarios que nos visitan, para festivales comunitarios, actividades de la iglesia y de la escuela. Actualmente hacemos talleres de pupusas para los visitantes, con ventas de las mismas, ayudando a la econom\u00eda familiar. Es com\u00fan pasar a casa de cualquier persona de la comunidad y que te ofrezcan una deliciosa pupusa con caf\u00e9.
